Toguri in Ueno’s Bamboo Garden (3F) is a wagyu yakiniku specialist where the spotlight stays firmly on the beef. The shop sources whole Yamagata wagyu directly from the region, keeping it fresh and letting each cut show its own balance of sweetness, richness, and bite once it hits the grill. Vegetables lean heavily domestic, often from partner farms, and the rice is chosen with care as well—grown with reduced chemical fertilizer.
